Almond Cookies

I think all cookies should be made with almond flour, it just gives such a gorgeous flavour and crunch.

These are nutty and addictive - don’t say I didn’t warn you!

 
 

Almond Cookies Recipe:

7 tablespoons softened butter
100g brown sugar
1 large egg
2 teaspoon vanilla extract or powder
1 tablespoon cornstarch
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
220g almond flour
120g almond pieces

Begin by adding together the butter & sugar until well combined.

Then add in the egg and vanilla and mix until everything is consistently incorporated.

Next, add in all the remaining ingredients until a cohesive “dough” forms. Let this chill in the fridge for 30 minutes then shape into the desired shape and bake at 180C for around 16 minutes.

*Don’t move them until they’ve cooled completely, they are still soft straight out of the oven.
